Ingredients

  1. 2.2 lbslarge chicken drumsticks
  2. 1bitter melon
  3. 6shiitake mushrooms
  4. 5cilantro roots
  5. 10 clovesgarlic, roughly crushed
  6. 2 teaspoonswhite peppercorns
  7. 3cinnamon sticks
  8. 4star anise
  9. 1small packet of Chinese herbal soup mix
  10. 1 tablespoonfive-spice powder
  11. 30 gramsrock sugar or granulated sugar
  12. 3 tablespoonscoconut sugar or palm sugar
  13. 1 tablespoonsalt
  14. 1/4 cupmushroom or oyster sauce
  15. 3 tablespoonslight soy sauce
  16. 3 tablespoonsseasoning sauce
  17. 1 tablespoondark sweet soy sauce
  18. 12 cupswater
  19. Noodles of your choice
  20. Vegetables of your choice, we use bean sprouts
  21. Fried garlic to taste
  22. Chopped green onions for garnish
  23. Chopped cilantro for garnish
  24. Salt for mixing with the bitter melon

Cooking Instructions

    Cut the bitter melon into desired pieces. Sprinkle salt over the bitter melon and gently mix. Add enough water to cover and soak for about 15 minutes, then rinse thoroughly. Blanch the bitter melon in hot water to reduce bitterness, then drain and set aside. Boil water until it boils, add chicken drumsticks and salt, and skim off any foam. Add star anise, cinnamon, cilantro roots, garlic, peppercorns, and Chinese herbal soup mix, and bring to a boil.

    Season with mushroom sauce, light soy sauce, dark sweet soy sauce, seasoning sauce, rock sugar or granulated sugar, coconut sugar, and five-spice powder. Stir to combine and adjust the taste as desired. Add shiitake mushrooms and bitter melon, cover, and do not stir. Wait until it boils, then simmer until the chicken is tender. Turn off the heat. Tip: Do not stir the bitter melon in the pot to prevent the soup and bitter melon from becoming bitter. Wait until it boils vigorously, then simmer for a while before stirring the soup. Taste again and adjust the flavor as desired 😍❤🥰.

    Boil the noodles and vegetables in boiling water until cooked. Place in a bowl, add braised chicken drumsticks and bitter melon on top of the noodles, pour the soup over, and garnish with fried garlic, green onions, and cilantro. Ready to serve and enjoy 😊😍❤.
