Ingredients

  1. 1/4 kgKathirikai/Brinjal
  2. 2 tspSesame Oil
  3. 1/4 tspMustard seeds
  4. 5Fenugreek seeds
  5. 1/4 tspAsafoetida
  6. 10Shallots roughly chopped
  7. as requiredCurry leaves few
  8. 1Medium Size Tomato chopped
  9. 1/4 tspTurmeric powder
  10. 2 tspSambar powder
  11. 5Garlic pods roughly chopped
  12. 1/2 cupTamarind extract
  13. as per your tasteSalt-
  14. -as requiredWater
  15. 1/2 cupGrated Coconut
  16. 1/2 tspCumin seeds
  17. as required Coriander leaves few

Steps

  1. 1

    Wash and cut the Brinjal and put it into a water bowl.

  2. 2

    In a kadai, add oil. Once oil gets heat, add mustard seeds, fenugreek and asafoetida. Fry it.

  3. 3

    Add shallots and curry leaves. Saute till shallots becomes translucent.

  4. 4

    Add tomatoes and brinjal, saute in medium flame for 5 mins.

  5. 5

    Add tamarind extract, garlic, turmeric powder, sambar powder and salt. Let it boil.

  6. 6

    Meanwhile add grated coconut and cumin seeds in a mixie. Grind to a smooth paste by adding water gradually.

  7. 7

    Add the ground paste in the curry. Then add required water. Cover and cook for 15 mins in medium flame.

  8. 8

    Garnish with coriander leaves. Mix well. Transfer to a bowl.

  9. 9

    Now it's ready to serve. Serve with hot rice, idli and dosa.
