Ingredients

  1. 3 cupCooked rice
  2. 8big Indian Gooseberry
  3. to tasteSalt
  4. PinchTurmeric Powder
  5. 3Green Chillies
  6. HandfulFresh Coriander chopped
  7. 1/2 inchGinger chopped
  8. PinchRoasted Fenugreek Powder
  9. 1 tbspGhee
  10. 3 tbspPeanuts
  11. 1 tspchana dal
  12. 1 tspurad dal
  13. 1 tspMustard Seeds
  14. 1/2 tspCumin Seeds
  15. 1/4 tspAsafoetida
  16. 2Dried Red Chillies Whole
  17. 10Curry Leaves
  18. 4 tbspCooking oil

Steps

  1. 1

    Wash amla and chop into small pieces,discard the seeds.

  2. 2

    In a mixer jar and add chopped green chilies, ginger, amla and fresh coriander and grind to make a paste.

  3. 3

    Add 1-2 tsp water if having difficulty in grinding.

  4. 4

    Heat oil in a wide pan and add peanuts and fry for few seconds til it start to crackle.

  5. 5

    Add urad daal, chana daal and stir for few seconds.

  6. 6

    Then add cumin, mustard seed,dried red chili, asafoetida and curry leaves and saute.

  7. 7

    When the cumin and the lentils become golden red in colour then add the amla paste in the pan and saute for 2 minutes on medium heat.

  8. 8

    Now add turmeric powder,the cooked rice, salt, roasted fenugreek powder and mix gently..

  9. 9

    Cook till the rice become hot and steaming

  10. 10

    Add 1 tbsp of ghee before switching off the heat.

  11. 11

    Serve amla rice with boondi raita or buttermilk.
