Native Jollof Rice

My Grandma use to make this for my siblings and I when ever we visited her. It's always so delicious that you will keep asking for more. Then she always make it with palm oil, locust bean, crayfish,Dry fish and scent leaves. I used smoked fish instead of dry and it came out yummy 😋.

Steps

Perboil rice and set aside(optional). Blend pepper as well

Clean protein, veggies and set aside.

Heat oil and fry onions and locust bean
- 4
Add pepper, spices and seasoning and boil on medium heat. Be careful when adding salt if using meat stock

Add rice
- 6
Add veggies and fish. You don't need to stir from the bottom. Just stir lightly on top and cover to cook

Stir, taste and adjust. Add scent leaves. I always cover my rice before serving for it to continue and complete the cooking process.
