I had marmalade, so I combined it with yoghurt to make these refreshing muffins!

I had marmalade, so I combined it with yoghurt to make these refreshing muffins!

Microwave (500 W) the butter for 20-30 seconds to soften, combine with sugar and mix with a whisk.

Stir in the egg with the whisk, then mix in the yoghurt and marmalade.

Sift in the flour and baking powder, and fold in a cutting motion with a rubber spatula.

Line the mould with paper cups (I used a pudding mould) and pour in the batter. Top with thinly sliced oranges if available.

Bake for 30 minutes in an oven preheated to 180ºC. You're all done!
