Eggs are replaced with aquafaba, the thick liquid from cooking chickpeas! Nothing goes to waste. The texture is just like classic chocolate mousse made with egg whites.

Ingredients

2 min
Serves 6 servings
  1. 3/4 cupaquafaba (liquid from canned chickpeas) (about 200 grams)
  2. 7 ozdark chocolate, 70% cocoa (about 200 grams)
  3. 1 tablespoonbrown sugar

Cooking Instructions

2 min
  1. 1

Whip the aquafaba until stiff peaks form, just like whipping egg whites. Add the sugar when it starts to foam, and continue whipping until the mixture is firm.

  2. 2

Melt the chocolate (using a microwave or double boiler). Let it cool slightly, then gently fold it into the whipped aquafaba with a spatula, being careful not to deflate the mousse.

  3. 3

Chill in the refrigerator for a few hours.

  4. 4

    Enjoy!
