Cooking Instructions

Whip the aquafaba until stiff peaks form, just like whipping egg whites. Add the sugar when it starts to foam, and continue whipping until the mixture is firm.

Melt the chocolate (using a microwave or double boiler). Let it cool slightly, then gently fold it into the whipped aquafaba with a spatula, being careful not to deflate the mousse.

Chill in the refrigerator for a few hours.
