Healthy Okara Nuggets

I made some okara stew, but I didn't know what to do with the leftover okara. After some thought, I made them into nuggets. They were surprisingly delicious. My husband loved them too.

For the seasoning, try Dashida, soup stock, chicken stock, or any other condiments of your choice. I'm sure people would mistake these nuggets as meat if they didn't know what they were made from.
Okara is packed with fiber and calcium which makes this dish great for expecting mothers.
If the nuggets are too crumbly, try adding some tofu for adjustment. Recipe by Mikaten

Ingredients

  • 200 gramsFresh okara
  • 100 gramsTofu
  • 3 tbspKatakuriko
  • 3 tbspMayonnaise
  • 1 tbspDashida, or powdered (chicken) soup stock
  • 1 tspGrated garlic

Steps

  1. 1

    Put all ingredients into a bowl (or a food processor). Fold everything with a wooden spatula.

    Mix until the mixture becomes soft and smooth.

    Shape it into a nugget-shape.

    Deep-fry until they turn golden brown.

    These nuggets are already flavored without any sauce, but you can also serve them with ketchup or mayonnaise if you'd like.

I made this with a roasted yukon potato instead of tofu and cornstarch instead of Katakuriko. I then airfried the nuggets, spraying and flipping periodically. Served with sriracha ranch. I think I may want to steam or somehow cook the okara before mixing everything in next time, but otherwise I'm really happy with how these turned out and relieved to have a use for the okara that comes from making soymilk! Thank you for a great recipe!
