6 cupsvegetable broth
3-4large yukon golden potatoes
1yellow onion
4garlic cloves (minced)
4 cupschoppe veggies (cauli., green beans, carrots, celery) etc
2-3zucchini chopped
1-18 ozjar diced tomatoes
2 tbspolive oil
1 tspgranulated garlic
1 tsprosemary
1 tsptyme
1 1/2 tspparsley
1 1/2 tspsea salt
1/2 tspblack pepper
2bay leaves

Steps

1 hour

Saute (in instant pot) onions, garlic and olive oil until golden brown

Add veggies and sauté for 5 minutes

Add broth, seasonings and diced tomatoes
4

Pressure cook for 30 minutes. Quick release and serve.
