I have been looking for the right combination of spices to make my green vegetable soup interesting and I think this is it! You can use all kinds of green vegetables and for an even lower carb option substitute peas or potato with celeriac root. The below recipe makes c. 3-4 letters of soup, enough for 8-10 people. I usually make it in batches when I have green veg to use up and freeze it for a quick lunch or dinner option later on.

Melt butter / olive oil. Add chopped shallots and garlic and stir fry until shallots become translucent but not brown.

Add water and any vegetables that are frozen or take a while to cook (eg ginger root, peas, leek, any frozen ones). Bring up a boil and immediately lower the heat to medium low so the soup just simmers.

Add all the spices except fresh herbs.

Add other vegetables in order they take to cook. Keep in mind fresh broccoli and green beans only needs a few minutes - do not overcook. Leave kale for lady, and spinach for the very very last- only flash cook spinach for a minute or less.

When cooked turn off the heat and let it cool for a bit. Add in fresh parsley / coriander into the soup - it will wilt from warmth but not cook. Put the soup on food processor (it will take a few batches) and add to a fresh pan. Taste and adjust salt and pepper to taste. Note: the vibrant green colour will come from spinach and herbs.

Serve with toppings - micro greens, sprouts, pumpkin and sesame seeds, crumbled feta, scallions spinach or even a hard boiled egg - this is a meal in itself! I also often heat up a mug of this soup and have when I feel peckish as it is - it’s great low calories meal. Enjoy!!!
