Ingredients

  1. 1Double 8 Cattle Company Fullblood Wagyu Strip Steak
  2. 3Navel Oranges (sliced in half and juiced) (SAVE the juiced halves)
  3. 3/4 CUPLager Beer (such as Modelo Especial)
  4. 1/4 CUPGrapeseed Oil
  5. 1/4 CUPLime Juice
  6. 1 TBSPKosher Salt
  7. 2Fresno Chili Peppers (chopped)
  8. 8Garlic Cloves (smashed)
  9. 2Whole Sprigs Rosemary
  10. 1 TSPDry Oregano
  11. 1/2 BunchCilantro (chopped)
  12. 3 StalksGreen Onion (chopped into 1'' sections)
  13. Corn Tortillas
  14. Salsa Fresca
  15. 4Tomatoes (chopped)
  16. 1/4Red Onion (chopped)
  17. 1Jalapeño (minced)
  18. 8Cilantro Sprigs (chopped)
  19. 3Garlic Cloves (minced)
  20. 1Lime (juiced)
  21. 1/4 CupGrapeseed Oil
  22. 1/2 TSPKosher Salt
  23. Guacamole
  24. 4Avocados (peeled, pitted, and mashed)
  25. 1Large Tomato (chopped)
  26. 1Serrano Pepper (stems and seeds removed) (minced)
  27. 1/8 CUPGreen Onions (finely chopped)
  28. 3 TBSPCilantro (finely chopped)
  29. 1Lemon (juiced)
  30. 2 TBSPKosher Salt

Cooking Instructions

    PREPARING THE SALSA FRESCA
    Combine all of the ingredients listed under “Salsa Fresca” on page 1. Mix thoroughly. Place in refrigerator until the steak is ready

    PREPARING THE GUACAMOLE
    Combine all of the ingredients listed under “Guacamole”, except the salt and lemon juice. Mix thoroughly. Slowly add in the lemon juice (make sure seeds are not in the juice) and kosher salt as you continue to mix. Place in refrigerator until the steak is ready.

    PREPARING THE MARINADE
    Combine orange juice, juiced orange halves, beer, grapeseed oil, lime juice, kosher salt, chopped fresno peppers, smashed garlic cloves, rosemary, dry oregano, cilantro, and chopped green onion. This is the marinade.Place Fullblood Wagyu strip steak in a large ziploc bag, and pour marinade over the strip steak. Marinate the strip steak for 1-2 hours, turning and massaging marinade into the steak every 15-20 minutes.

    COOKING INSTRUCTIONS
    Heat your grill to high. Discard the rosemary and orange halves. Let the marinade drain off. Place the marinated Fullblood Wagyu strip steak on the grill, and close the lid. Grill for 5 minutes on each side, and let the steak rest for 10 minutes. Cut into thin slices against the grain.

    FINAL STEPS
    Place sliced steak on warmed corn tortillas. Top with salsa fresca, guacamole, and other desired toppings.Enjoy!
