Ingredients

  1. 2 1/2 cupsall-purpose flour (about 300 grams)
  2. 3/4 cupcake flour (about 100 grams)
  3. 3/4 cupsemolina flour (about 100 grams)
  4. 1 1/3 cupswater (about 320 grams)
  5. 1/2 cuprefreshed and doubled sourdough starter (about 100 grams)
  6. 1 teaspoonsugar
  7. 1 1/2 tablespoonsolive oil (about 20 grams)
  8. 1/2 tablespoonsalt
  9. For topping
  10. Tomato sauce
  11. Salt
  12. Oregano
  13. Olive oil
  14. Mozzarella cheese

Cooking Instructions

    8:00 AM: Refresh the sourdough starter and let it double in size.

    12:00 PM: Dissolve the refreshed and doubled sourdough starter in slightly warm water, add the sugar and olive oil, and mix.

    Add the sifted flours and salt, and knead. Let it rest, and after 20 minutes, fold the dough. Repeat the folding process 2 more times, allowing 1 hour between each fold.

    Place the dough in a container covered with plastic wrap at 77°F (25°C) until 5:00 PM.

    At 5:00 PM, divide the dough into portions and let them rise again until 8:00 PM, still covered with plastic wrap.
