Fajitas were one of those things I considered best left to professionals to prepare (i.e. only to be enjoyed when eating out). Not anymore. These fajitas are as good, if not better, than any available in our local restaurants. The key, it turns out, is the spice blend. I took the Cajun mix I used to make scallop soup last week and boosted it with a little toasted cumin for depth and chipotle powder for warmth. The result was fantastic. And really, really delicious.

Ingredients

30 minutes
4 to 6 servings
  • 1 1/2 tbspsmoked paprika
  • 1 tbspkosher salt
  • 1 tbspblack pepper
  • 1 tbspgarlic powder
  • 1/2 tbsponion powder
  • 1/2 tbspground cayenne
  • 1/2 tbspdried thyme
  • 1/2 tbspdried oregano
  • 1/2 tbspground toasted cumin
  • 1/2 tbspchipotle powder
  • 300 gwhite button mushrooms, thinly sliced
  • 1broccoli crown, chopped into bite-sized pieces
  • 1medium green bell pepper, cut into thin strips
  • 1medium red bell pepper, cut into thin strips
  • 2striploin steaks (about 300 g each)
  • 1large onion, chopped
  • 4 clovesgarlic, minced
  • Ready-made salsa (I like mine fire-roasted)
  • Ready-made guacamole
  • Sour cream
  • Your choice of cheeses (cheddar, Monterey Jack, Colby are great)
  • Tortillas or wraps

Steps

    In a small bowl, combine the first 10 ingredients. This is your spice mix.

    Add a good splash of veg oil to a large pan on medium-high heat. Add the mushrooms and fry 2 or 3 minutes until they release their water and start to brown. Sprinkle on 1 tbsp of the spice mix and fry 1 more minute, then remove the mushrooms to a bowl.

    Refresh the oil in the pan if necessary then add the broccoli. Repeat Step 2 (fry, caramelize, hit with spice, fry some more) and remove to the same bowl as the mushrooms. Repeat again with the peppers (you can do both colours at the same time).

    Season the steaks with salt, then lay them into the same pan you used for the veg. Sprinkle a little spice mix on top, and sear for 4 to 5 minutes depending on thickness. Flip the steaks over and sprinkle with a little more spice mix. Let cook another 4 or 5 minutes, then remove them to a plate to rest.

    Return all the veg to the pan, and toss in the onion and garlic. Add 2 or 3 tbsp more spice mix (depending on your taste) and fry until the onions are softened. This shouldn't take more than about 5 minutes. Remove the veg to a serving bowl.

    Warm up some tortillas in the microwave, grate some cheese, and pull your salsa, guacamole, and sour cream from the fridge. Once rested, carve the steaks into thin strips. Set out all the components onto a table so that everyone can assemble their own fajita to enjoy.
