Baked Donuts Made with Rice Flour & Bananas

I've been making lots of snacks with rice flour for my son, who's allergic to wheat. I came up with this recipe because I wanted to make a simple recipe that my kid could eat every day.

There's no need to sift the dry ingredients as the recipe uses rice flour, which is less prone to clumping compared to wheat flour.
Add 2 tablespoons of kinako (roasted soy bean flour) to change them up with extra flavor. You could also try them with ground sesame seeds. The baking time can vary depending on your oven, so adjust as necessary.

Ingredients

5 servings
  1. 1Banana (small)
  2. 1Egg (medium)
  3. 5 tbspRice flour
  4. 1 tbspSkim milk powder
  5. 1/2 tspBaking powder
  6. 1 tspVegetable oil

Cooking Instructions

  1. 1

    Preheat the oven to 180ºC (or 356 F). Mash the banana with a fork. Beat the eggs well and mix with the banana.

    Add the remaining ingredients to the banana mixture from Step 1 and mix. Pour the batter into an greased mold. Bake in the oven at 180ºC for around 12 minutes. Done!

    The batter might feel a bit light and thin, but that's the way it should be!
