My Family's Superb Kimchi Hot Pot

I like kimchi hot pot, so I experimented and arrived at this version.

Add any vegetables you like. Sliced daikon radish and carrot would cook quickly and can be consumed a lot. If you prefer a spicy kick, add gochujang and shichimi togarashi. It is also delicious to add rice cakes and udon noodles. Oysters are a delicious addition. Recipe by Yuuyuu0221

Ingredients

4 servings
  1. 300 gramsPork belly
  2. 1 tbsp★ Soy sauce
  3. 1 tbsp★ Sake
  4. 1 clove★ Grated garlic
  5. 300 gramsNapa cabbage kimchi
  6. 2 tbspSake
  7. 800 mlWater
  8. 1 tbsp☆ Gochujang
  9. 1 tbsp☆ Red miso or blended miso
  10. 2 tbsp☆ Soy sauce
  11. 1 tsp☆ Sugar
  12. 1 clove☆ Grated garlic
  13. 1 pinchSalt
  14. 1 bunchGarlic chives
  15. 1or 2 blocks Tofu
  16. 1Enoki mushrooms, bean sprouts, napa cabbage
  17. 1Daikon radish, carrot, Japanese leeks
  18. 1Sesame oil
  19. 1 tspChinese soup stock

Steps

  1. 1

    Cut the pork into 4-5 cm lengths. Mix all ★ ingredients and grated garlic and use mixture to marinate pork for 15 minutes.

    Cut the vegetables to your liking. Cut tofu into 6 or 8 pieces.

    Squeeze the liquid out of the kimchi and save. Mix all ☆ ingredients in a bowl.

    Heat an earthen pot with sesame oil (1 tablespoon) and cook the pork.

    Add sesame oil to Step 4, add kimchi from Step 3, and cook for 1-2 minutes.

    Add sake, water, kimchi liquid, and Chinese soup stock to Step 5, and after it boils, add tofu and cores of Chinese cabbage. Continue cooking.

    Add the ☆ ingredients and salt to Step 6, and add the rest of vegetables (add Chinese chives, leek, the leaves of Chinese cabbage and enoki mushrooms in the end, because they cook the quickest).

    I also added Chinese soup stock in the ingredients. You don't have to, but if the kimchi lacks flavor, it'll be good to add it.
