Ingredients

25 minutes
2-3 persons
  • 20 mloil
  • 1/2 tsppanch phoron
  • FewCurry leaves
  • 2dry red chillies
  • As RequiredHing (pinch)
  • 1/2 tspginger (grated)
  • 4-6garlic cloves (pounded)
  • 1 bowlVegetables(2 small brinjals, 4-5 bhindi, 1tomato,
  • As Requiredall vegetables cut into long 1 inch pieces)
  • As Required(you can add lauki/ radish/ drumsticks/ shallots also)
  • As Per TasteSalt
  • 1/2 tspturmeric powder
  • 1/2 tspred chilli powder
  • 1/2 tspcoriander powder
  • 1/2 tspdry roasted cumin and dry red chillies powder
  • Small ball of tamarind
  • As required(soaked in warm water and then pulp removed)
  • 3-4 tbspjaggery powder
  • As Required(adjust sweetness and sourness as per preference)

Steps

  1. 1

    Heat oil. Splutter panch phoron. Add dry red chilies, curry leaves, grated ginger, and pounded garlic. Saute. Next, add the vegetables. Put salt, turmeric powder, and hing.

    Mix and saute the vegetables for some time. Next, add coriander powder and mix. Cover and cook the vegetables till softened. Next, add water covering the vegetables. Let it be on medium heat.

    Next, add jaggery powder as per your taste. Mix well. As it cooks and comes to a boil, add red chili powder and mix.

    Next, add the tamarind pulp and mix. Let it all cook together till flavours combine well.
    Cook till the required consistency. Sprinkle roasted cumin and dry red chilies powder. Give a nice gentle mix.
    Switch the flame off and let it settle and come down to room temperature.
    As it settles vegetables absorb the flavours well.

    Serve it with rice and enjoy the khatta meetha taste.
