Cooking Instructions
- 1
Salt all over the joint then rub in the garlic. I like to cover in a lot of cling film and leave in fridge over night.
- 2
Cut onion and carrot into large pieces and put in the bottom of a roasting tin or pot. Mix the stock cubes with hot water and pour over the veg.
- 3
In a large frying pan on a high heat brown the lamb on all sides. Then put ontop of the veg. Drizzle with olive oil
- 4
Cover tightly with foil and put in pre heated oven at 170c for 5-6 hours.
- 5
Remove and serve. The smell in my house all afternoon makes me hungry 🤣
