My Peanut Fudge cookies 😍🇦🇨🥜

My favourite nuts are Peanut Butters. In my city and in the villages, on rainy cold weather we children loves nibbles dried cooked peanuts or boiled peanuts. Praise and thank be to God who provvide for us a snack that don't need to consume with sugar, no oil or butter. Now growing up as an adult, in NZ I started to try all sorts of cookies or slices, so that I know on how to bake. Here we go, I've tried to cook this Edmond's cookies with a little changing of the recipe. I can't eat too hard & crunchy cookies as my teeth are aching, its time to go to the dentist, so today I cook this cookies just for my friends 🤗. Happy cooking!

Preheat the oven to 180 C. Line the oven baking tray with baking paper.

In a large bowl put the softened butter, sugar and cream together until light and fluffy. Add 3 eggs, beat well one egg at a time. Then add flour, baking powder, cocoa and salt (no salt if using the bought roasted peanuts which has been salted) and stir together with a big spoon until well combined. Lastly add the cold Peanuts and mix well.

Roll tablespoons of mixture into balls. Place on the grease oven trays, place distance apart, then flatten with the back of the spoon or with a floured fork that gives a fancy line mark on top.

Bake at 180 C for 15 minutes or until just firm to the touch but still a little soft in the middle. The cookies will firm up more once they've cooled. Allow to cool completely in the baking tray. Store in an airtight container. Enjoy 😙
