🇮🇹 Vegetarian Pesto 🇮🇹 🇮🇹 Vegetarian Pesto 🇮🇹
Many people don’t know this but store bought pesto is actually not vegetarian. The reason is because of the Parmesan cheese in it. Original Parmesan cheeses is made with rennet, an enzyme obtained from the stomach lining of slaughtered calves. However, there are several companies who have made their mission to provide rennet-free cheese options. BelGioioso and Tillamook are some of them.Depending on where you live, you can find vegetarian Parmesan cheese available at local grocery stores or online. Just search up “rennet-free” or “ vegetarian” Parmesan cheese near me.You will notice that non of the nutty and bold flavor of the cheese is altered by the absence of rennet, so the pesto will taste just as rich.NOTES:*Make sure to use Parmesan Cheese label as “vegetarian” or with some indication of no animal rennet. If you aren’t sure, check out the company’s website.#CA2025 Veggie K -

Fava Beans Tossed with Parmigiano Reggiano Fava Beans Tossed with Parmigiano Reggiano
The recipe that my daughter learned in an Italian cooking school was to boil the fava beans, mix them with pecorino cheese and sprinkle them with extra virgin olive oil and rock salt.Based upon that recipe, this is a simpler variation to cook the fava beans in the microwave, and add Parmigiano Reggiano, Krazy Salt, and olive oil.Adjust the amount and kind of cheese, salt, and olive oil to suit your taste.I recommend cooking fava beans in the microwave. It's convenient since you can even cook only 1 pod. Here's a list of cooking time for your reference (at 600 W):1 pod = 1 minute; 2 pods = 1 minute 20 seconds; 5 pods = 2 minutes 30 seconds. These are estimates, so experiment to see what works with you. Fava Beans, Avocado and Tomatoes in Basil Sauce Fava Beans, Avocado and Tomatoes in Basil Sauce
For nearly 50 years, I believed that fava beans had to be boiled in salted water, but since I had cooked corn on the cob successfully in the microwave, I decided to give fava beans a try, too. They turned out really well, and now I'm hooked on this way of cooking them. This is a dish where I mixed these beans with homemade basil pesto.I cooked these fava beans in the microwave, but of course you can boil them, instead.Use a few more cashew nuts than the other nuts for the basil pesto. Adjust the amount of salt according to the type of salt you use. This recipe is very easy if you use store-bought basil pesto. Recipe by gingamom cookpad.japan
