Pinakbet was the dish i first thought to cook today but I ended up with this. Well, not bad anyway! Delicious veggies!

Ingredients

  1. 3 clovesgarlic
  2. 1/2of big onion sliced
  3. salt and pepper
  4. 1/4squash sliced
  5. 1-2 cupwater
  6. 1 pceggplant
  7. 1 pcbitter melon
  8. 1 teaspoonfish sauce
  9. 1 tablespoonsoy sauce
  10. 1canned coconut milk
  11. 1/4pork
  12. 1/4shrimp

Cooking Instructions

  1. 1

    Sautè garlic and onion and let it stand until it turned soft

  2. 2

    Add pork and cook for a minute until it turned brown and then add shrimp and cook until it turned pinkish, then add sliced squash.

  3. 3

    Pour coconut milk and let it boil. Add seasoning such as salt and pepper to taste, fish sauce and soy sauce. Let it boil for 3 minutes.

    Add eggplant and bitter melon and let it simmer until the veggies turned soft.

  5. 5

    Ready to serve! Enjoy your meal!
