Cooking Instructions

Wash the vegetables, crush the lemongrass, and cut it into pieces. Crush the garlic and cut the chicken. Set the pot on the stove.

When the water boils, add lemongrass, galangal, garlic, and chicken-flavored soup powder. Wait until it boils again, then add the chicken. We sneak in some bones for extra flavor.

Next, add kaffir lime leaves and shallots. Skim off any foam to keep the soup clear.

The aroma will hit your nose. Once cooked, add the tomatoes. Season with fish sauce and salt.
When the flavor is right, add cilantro, sawtooth coriander, and chilies. We crush the bird's eye chilies to float as whole pieces.
Then turn off the heat, add lime juice, and serve in a bowl. Prepare some steamed rice. ☺️ It doesn't get easier than this!

My workplace has this soup every Friday. I didn't just want to wait till Friday of the following week to have the soup so I hunted a recipe down! A mention about the lemon grass, remove the outer layers, finely chop a length about 4-5 inches long, then chop it again! Or put it in one of those mini choppers if you have one.. you want it as finely chopped as possible.
