Tonight, I made some impromptu meatballs using slightly unusual ingredients. I didn't have eggs, but I had an older zucchini, and with the help of breadcrumbs, the mixture held up well during cooking, even in the air fryer 👌😉👩🍳
Cooking Instructions

Clean, wash, and grate the zucchini. Place it in a bowl, add the ground veal, breadcrumbs, Parmesan, parsley, and spices. Season with salt and mix everything well.

Form meatballs and roll them in breadcrumbs mixed with a tablespoon of sesame seeds.

Place a lightly oiled sheet of parchment paper in the air fryer basket, arrange the meatballs, spray with a little oil, and cook for about 15 minutes at 356°F (180°C). Check halfway through to see if they need turning.

They are delicious as is, but I had some leftover tomato sauce and simmered some of the meatballs in it for a few minutes. Delicious both ways 😋
