Finely chop spinach.Wash and drain water completely. Mix besan (gramflour/ chickpea flour) with rice flour.Rice flour imparts crispiness to the pancakes.Add 1 tsp hot oil and salt to taste.Add ajwain, asafoetida,turmeric and red chilli powder,cumin powder and chaat masala.Mix all.Then add approximately 1 cup water and blend well to make a thick batter.

Make sure there are no lumps in the batter.Add lemon juice. Now add chopped spinach,onion,tomato,capsicum,grated carrot,ginger garlic paste and give it a good stir with a whisk.Now add 1 tsp Eno Fruit Salt and mix to combine all.

To cook:
Heat oil in a non-stick pan on medium heat.Add a ladleful of batter and spread with the back of the ladle.It should look like an omelette of medium thickness.Cook for about 3 minutes till the edges start to brown and can be lifted easily.Sprinkle some sesame seeds and press them.Then flip the chilla and cook the other side till golden brown. - 4
Transfer the cooked chilla on a plate and repeat frying other chillas till all the batter is used.Serve crispy hot spinach besan chilla for a hearty breakfast,evening snack or kid's tiffin with tomato ketchup,mixed pickle or a dip of curd or green chutney.
