Prepare all the ingredients.

Melt the butter in a pan, then add the shallot and garlic. Cook for 2 minutes over medium heat until softened.

Add the chorizo. Cook for about 2 more minutes. Then add the escargots. Cook for 3-4 minutes, stirring every minute.

Add the fresh herbs and green onions. Stir. Then add the cream cheese. Stir and cook until the cheese is fully melted and blended into the mixture.

Serve immediately in a ramekin. Makes two generous servings.
