Ingredients

4 servings
  • 4Papad, (Masala papad)
  • 4Potato, peeled, cubed
  • 1Tomato Chopped,
  • 1 inchGinger, paste
  • 1Bay leaf
  • 1Dry Red Chilli
  • 1/1 teaspoonCumin seeds
  • 1 teaspoonCumin powder
  • 1 teaspoonTurmeric powder
  • 1/2 teaspoonRed Chilli powder
  • 1 teaspoonSugar
  • 1 teaspoonGaram masala powder
  • Salt, to taste
  • 1/4 cOil1/2
  • 1 teaspoonGhee
  • 1/2 cchopped cilantro

Steps

    Wash and Peel Potatoes and then cut each Potato into small cubes. Heat Oil in a pan and fry Potato pieces till they turn golden brown in color, remove from the kadai; Strain fried potatoes and keep them aside. Alternatively you may fry the potatoes with 2tbsp oil in a microwave safe bowl, cook for 3 minutes. that is what I did.

    Break each papad into 4 pieces and fry them in the remaining oil. It takes approximately 20-30 seconds to fry 4 pieces of papad in high flame. Strain the fried papad from oil. I fried the papad pieces in a microwave safe plate with 2tbsp oil for 2 minutes

    I added chopped tomato and ginger to a blender jar and pureed. keep the puree aside for later use

    In a kadai, Over medium heat, temper the remaining oil with bay leaf; dry red chili and whole cumin seeds and wait till the tempering starts to crackle., about 2minutes
    Now add tomato puree with ginger in it to the tempering and start cooking in medium flame till the raw smell of tomato goes away and cook on medium flame till the oil separates from the mixture.

    Now, mix turmeric powder; red chili powder and cumin powder with 1 tsp of water and make a thick paste and add this paste to the tomato puree and mix properly.
    Add sugar and salt in the mixture and then add a teaspoon of water and cook till the oil separates. Add fried potatoes to this mixture and coat properly with spices and add 1.5 cup of water.
    Cover the pan with a lid and cook till the potatoes are cooked properly

    After the potatoes are done adjust the water and place fried papad on the top of potato and again cover the pan with a lid and cook for 3-4 minutes.
    Open the lid and mix the gravy carefully as the papad will be completely soft by now.
    Add garam masala powder and ghee to the curry and cook for 2 more minutes and turn off the stove. garnish with cilantro

    Papad er Dalna is now ready. Transfer to a serving bowl. You may serve the dish with rice, roti or parantha..
