Chicken Pakeeza is a delicious dish inspired from some of the ancient recipes of the Mughlai tradition. Wash and drain out all water from chicken. Marinate chicken with all the ingredients listed under marination. Set aside for an hour.Meanwhile heat 1 tbsp oil in a pan.Sprinkle cumin seeds,half crushed whole garam masala,black peppercorns,dry red chillies and bay leaves.

Next add chopped onion,ginger garlic and green chillies.Saute till light brown. Now add the chopped tomatoes and cook till they are soft.Add sesame or melon seeds and cook till there is a nice aroma of roasted masala. Set aside to cool.Then grind it to a paste alongwith 1 tbsp of thick malai and 2 tbsp water or as needed.

Heat oil in a wok or pan and fry marinated chicken on high flame till it changes colour.Add 1 cup water, cover and cook chicken on low to medium flame till it is tender.Set aside.Heat 2 tbsp oil and fry the finely sliced onion till crispy and golden brown.

In a separate pan heat ghee and oil alongwith the leftover oil from fried chicken.Add the ground paste and fry on low to medium flame till oil separates.Add the fried chicken and 1/4 th cup water or as needed.Cook on medium flame stirring at intervals and cook till oil separates.Add kasoori methi, a sprinkling of fresh cream and some chopped coriander. Mix and simmer for 5 minutes till masala and chicken are well combined.

Garnish with chopped coriander and grated cheese. Serve hot with tandoori roti,naan or any Indian flatbread.
