Baingan bharta is a delicious preparation from roasted Brinjals which is a traditional recipe of Maharashtra, North India and many other states too. It's rich in minerals and vitamins. First, wash and dry the brinjals. Then apply 1/2 tsp oil on each and make pricks all over with knife. Insert 4 to 5 garlic cloves in each for flavour. Fire roast them on all sides till flesh turns soft and skin turns black.

Cool the brinjals and remove skin with wet fingers so that the skin doesn't stick. Then remove the stem and mash the brinjals with fork to a coarse paste.

Heat oil. Add mustard, cumin, asafoetida, curry leaves and saute'well.

Then add onions, chillies, ginger garlic paste and chopped tomatoes. Cook till soft and aromatic. Then add chilli powder, salt, lemon juice and mix well. Garnish with chopped coriander leaves and chopped onion on top.

Serve hot with bhakri, roti or fulka. I served with Rice flour Bhakri. Enjoy!
