Salmon can get oily if you cook it in a pan. Washing up is also a pain. I wanted a dish that is easy to cook and clean up ヾ( ;)ゞ
Because the mayonnaise is mixed with panko breadcrumbs, it won't become oily and run off the salmon when baked. Serving is very easy.
By the way... this dish is easy to reheat in the microwave for a husband returning home from work late. I do this often and find the amount of sauce to be just perfect.

Fresh salmon needs seasoning, so make sure to sprinkle it with salt and pepper before adding the sauce.
It's so easy, just pop it in the oven.

Ingredients

2 servings
  1. 2 filletsFresh salmon
  2. 3to 4 tablespoons Mayonnaise
  3. 1 tbspPanko
  4. 1 tbspPowdered cheese
  5. 1 tspSoy sauce
  6. 1Parsely Basil etc.
  7. 1 pinchSalt and pepper

Cooking Instructions

    Season the salmon with salt and pepper.

    Put all the ingredients except the salmon into a small bowl and mix. I used blanched and minced spinach in the recipe, but you can use parsley or other green herbs or vegetables for colour. My young child doesn't like parsley.

    Line a baking sheet with parchment paper and lay the salmon filets. Spoon the sauce from Step 2 on top of the salmon.

    Bake at 340F/170C for 4 minutes Now you are done! Adjust the cooking time to suit your oven. (I always let them finish cooking in residual heat.)
