Spicy and Savoury Noodles (Vegan)

My simple and quick #vegan recipe for savoury and mildly spicy tofu and shiitake mushroom noodles, cooked in a rich green tea and vegetable broth. I hope you enjoy this very comforting meal! 🍜
If you're #vegetarian, you can also add halves of boiled eggs to the dish. You can also marinate the eggs in soy sauce and sake, if available.
Spicy and Savoury Noodles (Vegan)

Prepare all ingredients. Slice tofu into cubes, thin slices of chilli pepper and spring onions, and halves of shiitake mushrooms.
Also, make approximately one litre of green tea.

To make the broth, add green tea to the pot, as well as salt, pepper, chilli powder, oil, soy sauce, and rice vinegar.
Cook until it starts simmering. Then, add half of a vegetable stock cube and dissolve it.

Turn the heat down to medium. Add the shiitake mushrooms, tofu, spring onions, and chilli pepper to the broth.
Keep simmering on low-medium heat for 10-15 minutes while occasionally stirring. You want the ingredients to soften up and absorb the flavours of the broth.

Add the noodles to the pot. Keep cooking for about 6-7 minutes, or until the noodles are properly cooked (according to package instructions).
Taste the broth and add more salt, pepper and chilli powder, if needed. Keep stirring from time to time.

Once you're done, serve and garnish with fresh chopped spring onions. Enjoy your meal!
