Ingredients

  1. For boondi -
  2. 1 cupchickpeas flour/ besan
  3. 2 tspmaida
  4. 1/4 tspturmeric powder
  5. 1 pinchbaking soda
  6. 1 tbspoil
  7. 5-6 dropsred colour
  8. Oil for deep frying
  9. For syrup -
  10. 2 cupssugar
  11. 1 cupwater
  12. 1 tsplemon juice
  13. 8-10saffron strands
  14. Chopped pista, melon seeds, rose petals for garnish

    Making Batter - Take a bowl sieve the besan add soda, turmeric powder, oil mix it well then add water gradually and make a thick pouring consistency batter. Keep aside for 30 minutes.

    Making sugar syrup -
    Take water, sugar and saffron strands in a kadai, keep cooking till it becomes a single string consistency. Add lemon juice and mix it well and cook another 2-3 minutes to stop sugar crystallization.

    Now mix the batter well again. Heat sufficient oil in a kadai, place the boondi strainer with few heights from kadai and pour a ladleful of batter into the strainer and tap the strainer slowly. Fry the boondi on medium flame.

    Once the boondi fried on golden brown take out with a strainer and keep into the plate.

    In the same way, mixed red colour into the batter and fry them, keep aside.

    Now add this boondi into the sugar syrup. Sugar syrup should be slightly warm for the boondi to absorb the syrup. Now leave this boondi in this syrup for 3 hours so that it absorbs the syrup very nicely. Boondi is ready.

    Serve the boondi with garnish chopped pista, melon seeds and rose petals.
