Ingredients

  1. 1/2 cuppanaeng curry paste
  2. 300 gramspork with some fat
  3. 1 cupcoconut milk (use boxed coconut milk)
  4. 5-6red chilies
  5. 1small cup thinly sliced kaffir lime leaves
  6. 1small cup pea eggplants (optional)
  7. 2 tablespoonspalm sugar
  8. 2 tablespoonsfish sauce
  9. 1/2 teaspoonsalt

Cooking Instructions

    Stir-fry the curry paste with the thick part of the coconut milk until the oil separates (use half of the coconut milk).

    Add the pork and stir-fry until it starts to cook.

    Add the remaining coconut milk and bring to a boil. Add 1/2 cup of water (add water because boxed coconut milk doesn't separate into thick and thin parts).

    Season with palm sugar, fish sauce, and salt. Add the pea eggplants and simmer until the curry boils and the eggplants are cooked. Finally, add the sliced kaffir lime leaves and red chilies.
