Heat the Olive Oil over medium-high heat in a large Dutch Oven or Soup Pot. Add Onion and Garlic and saute until the onions are translucent. Add Carrots.

Cook stirring occasionally for 5 minutes till Carrots starts sweating. Add the Vegetable Stock, Baby Marrows, Tomatoes, Red Bell Pepper, Italian Herbs, Crushed Red Pepper Flakes, Salt, and Black Pepper.

Bring to a boil, reduce heat, and simmer for 5-10 minutes. Add in the Broccoli and Cauliflower.

Continue simmering until cooked. Dish up and garnish with Fresh Flat-Leaf Parsley.
