Fried Cauliflower Gnocchi

Start boiling water.
Cut the cauliflower head into large florets. Then rice them with a knife. I even minced stalks and all.

Cover cauliflower rice and microwave until tender. Between 5-10 minutes.
You can also boil florets till soft.

Place cauliflower into food processor. Add oil and make into a puree. I left my cauliflower with tiny chunks. Only because I like it that way :)

Blend/whisk cassava flour, potato starch, salt and rosemary.
Add in the puree mixture and make into a dough. I used my hands to knead.

Cut the dough in 4's

Roll out and stamp with fork.

Place dough pieces in boiling water. They will float or rise to the top when done. Takes about 3 to 5 minutes.

Drain gently. Transfer to plate, add desired sauce, and serve.

Now, this is off the original recipe. I messed up the dough somehow, and my gnocchi came out of the water mushy.
I, in return, fried them until golden brown.
