Ingredients

1 serving
  • 1/2 tbsproasted sesame seed oil
  • 50 gpork belly
  • 75 gcabbage kimchi
  • 1/4 tbspgochujang chilli paste
  • 1garlic clove, crushed
  • 1/2 cmpiece of ginger, finely grated
  • 1/2 tsphoney
  • 1 tbspkimchi juice
  • 200 mlbeef stock or water
  • 1/4courgette sliced into half-moon shapes
  • 50 gfirm tofu

Steps

  1. 1

    Cut the pork belly into bite-size pieces

  2. 2

    Heat the sesame seed oil in a large pan over medium heat, add the pork and kimchi and sauté for 8-10 minutes

  3. 3

    Add in the gochujang paste, garlic, ginger and honey and fry for a further 2 minutes, stirring regularly

  4. 4

    Add in the kimchi juice and stock or water and bring to the boil, reduce the heat a little and simmer for 20 minutes

  5. 5

    Add the courgette and tofu and simmer for another 5 minutes

  6. 6

    Serve in bowls and, if you wish, with some rice on the side
