A Christmas Eve tradition in our family. Eat over toast. The kind of dish that is better the next day.

Shred dried beef.

Melt butter in a medium-large pot with dried beef.

Turn off heat once all butter is melted.

Add 6 heaping tablespoons of flour. Mix together until flour is incorporated.

Turn heat on low. Gradually add 6 cups of milk. Mix after every 2 cups.

Continue with low-medium heat and stir slowly until thick. If not thickening, make a roux in a separate pan and add.

Once thickened and creamy, enjoy over toast.
