Ingredients

Serves 2 to 3 servings
  1. 2medium eggplants (about 4 oz each)
  2. 1medium zucchini (about 4 oz)
  3. 2 ozbacon
  4. 1 clovegarlic (about 1/3 oz)
  5. Salt and pepper, to taste
  6. 1 tablespoonvegetable oil
  7. 1 1/4 cupstomato puree (about 10 oz)
  8. 1 1/4 cupswater (about 10 oz)
  9. 1/2 cupsake (about 3 1/2 oz)
  10. 4 teaspoons(2 standard cubes) bouillon
  11. 1bay leaf
  12. 1 tablespoonoyster sauce
  13. 7 ozpasta
  14. Water and salt, as needed for boiling

Cooking Instructions

  1. 1

Slice the eggplant and zucchini into rounds. Soak the eggplant in water. Cut the bacon into bite-sized pieces and mince the garlic.

  2. 2

Heat olive oil in a pan, sauté the garlic until fragrant, then add the bacon and cook.

  3. 3

Add the eggplant and zucchini, season with salt and pepper, and sauté thoroughly.

  4. 4

If you get carried away flipping the pan, the zucchini might slide out. If you quickly put it back, it's all good.

  5. 5

Add the ingredients marked with ◯ and let it simmer. Meanwhile, boil water for the pasta.

  6. 6

When the sauce is thick enough to leave a trail when you drag a spatula through it, add the oyster sauce. This is key. Check on the pasta.

  7. 7

Mix the cooked pasta with the sauce.

  8. 8

    Plate and serve!

  9. 9

It might not look fancy, but it's delicious when you mix it all together. So rich!
