Cooking Instructions
- 1
Slice the onion and king oyster mushroom into bite-sized pieces. (Cutting them thinly helps them cook faster and soak up more flavor.)
- 2
Heat a frying pan and lightly cook the ground meat. Once it starts to release oil, add the onion and mushroom. Sauté until they become tender.
- 3
Add the sugar, soy sauce, dashi granules, and sake to the pan. Taste and adjust the sweet and savory flavor to your liking. (Since you’ll add udon and eggs, make the sauce a bit stronger.)
- 4
Add the lightly boiled udon noodles (if using frozen udon, microwave in the package) to the pan. Toss gently to coat with the sauce.
- 5
Serve on plates, top each with an egg yolk, and sprinkle with chopped green onions. Enjoy! (^^)♪

I like fried tofu deeply marinated in sukiyaki sauce . I thought up a recipe where the sukiyaki sauce played a supporting role to the leading tofu using age. Both the atsuage and ground pork already have plenty of oil, so let them cook in their own grease without adding oil. Tofu and leeks are so yummy soaked up with the juice of chicken. The combination of Korean chili pepper, garlic (mashed rather than grated) and soy sauce, is similar, but a bit different from the flavoring in Japanese simmered dishes. The chili pepper isn't as hot as Japanese chili pepper and smells and tastes wonderful. Please be sure to try it in simmered fish dishes or in pickles. It's not too hot, even if you use a lot. I made our family version of chicken sukiyaki at my husband's request.Put vegetables with high water content in first to increase the sukiyaki sauce by the amount of water that comes out from them.I didn't use this time, but burdock root and daikon radish go really well with this dish! It's also tasty if you use duck instead of chicken. We finish off sukiyaki with udon noodles, but it will also be delicious if you make rice porridge with cooked rice and some eggs.
