Ingredients

Serves 2 servings
  1. 2 packsudon noodles
  2. 5.3 oz (150 g)ground beef and pork mix
  3. 1/2onion
  4. 1king oyster mushroom (eringi)
  5. 2eggs
  6. Chopped green onions, to taste
  7. 2 tablespoonssugar
  8. 3 tablespoonssoy sauce
  9. 1 pinchdashi granules
  10. 1 splashsake

Cooking Instructions

    Slice the onion and king oyster mushroom into bite-sized pieces. (Cutting them thinly helps them cook faster and soak up more flavor.)

    Heat a frying pan and lightly cook the ground meat. Once it starts to release oil, add the onion and mushroom. Sauté until they become tender.

    Add the sugar, soy sauce, dashi granules, and sake to the pan. Taste and adjust the sweet and savory flavor to your liking. (Since you’ll add udon and eggs, make the sauce a bit stronger.)

    Add the lightly boiled udon noodles (if using frozen udon, microwave in the package) to the pan. Toss gently to coat with the sauce.
