Choose edamame with a deep green color and a nice curve for freshness. This recipe's background: Look for pods with many beans attached to a single stem. Select ones with a vibrant green color, covered in fine hairs, and a nice curve. Avoid those with brown leaves. Choose pods with three plump beans each.

Ingredients

  1. 1 bag(about 250g) edamame
  2. 40 g+ a pinch of salt
  3. 1 quart(about 1 liter) water

Cooking Instructions

  1. 1

Cut the pods from the stem (if you have time, trim both ends), and rub with 10g of salt (do not rinse off).

  2. 2

Add 30 grams of salt to 1 quart of boiling water, then add the edamame from step 1 and boil for 3 1/2 to 4 minutes.

  3. 3

Drain the water, taste, and if it's not salty enough, sprinkle with a pinch of salt (especially if you only trimmed one end), and cool with a fan.
