Mike's Two Way Grilled Chicken Skewers

As you can probably tell - I seriously over ordered on skinless chicken breasts this month. With that, my students were forced to get really creative with them.
All in all, they ended up cooking, baking or grilling 16 pounds of chicken. While all of their recipes were excellent, I enjoyed these two the most for flavor, simplicity and absolute ease. Great work, photos and documentation kiddos! Delicious!
Oh, and Joseph? Do thank your parents again for not suing me for your hellatious lower arm grill burn. Or, as we like to call em' here, "Chefs Badges!" 😆♨😆
Mike's Two Way Grilled Chicken Skewers

Cooking Instructions

Brine four one pound fat free chicken breasts in 35° ice water.

Add 1/2 cup salt, 1/2 cup sugar 1 tbsp granulated garlic and 1 tbsp granulated onion for 2 hours.

Cut breasts into 1.5" even cubes for even grilling.

Separate chicken cubes evenly in to two large Ziplock bags and season. Marinate both for 1 hour or longer. Reserve any oils and Siriacha Chili mixtures for grilling/coating later.

Siriacha Hot Chili Sauce and Siriacha Chili Garlic Sauce pictured.

Chop all desired vegetables.

Soak wooden skewers in water for 5 minutes. Or, you can use metal skewers. Thread chicken on skewers with a 2.5" onion slice in between each chicken cube for flavor and even grilling.

Grill for 7 to 10 minutes [or until juices run clear] and make sure you get a good char on each. Don't over grill tho. Coat with reserved Siriachas and Garlic olive oil as they grill. Know that the Siriacha Skewers will be much hotter with the additional sauce at finish.

Feel free to grill your vegetables as well for 7 to 10 minutes on indirect heat. Just lightly coat with olive oil and listed seasonings if so.

Grill breads until charred. Just coat lightly with olive oil before.

Wrap chicken up in 6"Naan or 6" flour tortillas.

Serve on grilled Naan bread or flour tortillas. Construct with the vegetables you and your guests desire. Enjoy! Especially with ice cold beers in thick frosty mugs!

So simple, so juicy, so delicious!Yakitori literally means, "grilled chicken." But, also refers to any skewered foods in general. Yakitori is also made with bite sized pieces of chicken meat, chicken skin, chicken offal - like chicken livers, cartilage or gizzards. Or, other meats and vegetables skewered on soaked bamboo scewers. AKA, "Kushi." It's also always grilled over binchōtan charcoal.Unfortunately, my small Yakatori Grill is currently being refurbished and my students were forced to cook them on my gas grill this evening. Just know that binchōtan charcoal under a traditional Yakitori Grill absolutely makes this dish flavor wise. You can find all of these ingredients, including the grill, at your local Asian market. While this recipe may take some time on your part, you will not regret your efforts by any means. I mean that! Neither will your family or guests! Just know that this recipe is so easy to follow, my 7 and 8 year old culinary students made this dish tonight with little supervision and, minimal follow up questions.This dish is so flavorful and downright juicy folks! Between the moisture in your brined chicken, especially your oversized mushrooms and your Tzatziki Sauce, you won't even need a beer to follow it up with! Hence the need to serve them with a thick, seasoned, absorbent, oversized piece of Naan Bread!Know that this dish also makes a great vegetarian option as well. As for the Tzatziki Sauce, it's a bit untraditional with the addition of the fresh minced chives and it being heavy on the sour cream as opposed to the Greek Yogurt. But, it certainly works! Especially for those who aren't exactly fond of the bitter / sour taste known to accompany Greek Yogurt. Tho the slight amount of sour Greek Yogurt added does pair nicely with the sweetness of the Vidalia Onions.Total manual prep time will take you approximately 60 minutes if making this dish for the first time alone. Total wait time will be much longer with the brine and marinating time.Of all the dishes I make, and I make many, this is my wife's, and all her friends favorite. In fact, everyone on their birthday gets a special, "dish wish." This one is easily the most requested next to my Green Chilie Stew.Use the freshest, crispiest garden vegetables, herbs, chicken and Naan breads for best results! Tip? Know that you can change the spice pallet on these Kebobs in a heartbeat!Serving fish? Subtract the Italian Seasonings and add Lemon Pepper, Dill or lemon zest. Serving beef? Try adding more fresh ground black pepper a couple hints of Worchestershire Sauce. Planning on serving Mexican? Employ some Ground Cumin and Mexican Oregano instead of regular oregano.
