Ingredients

  • 8 ozziti pasta
  • 1 tbspbutter
  • 1 lbchicken, cut into bite sized pieces
  • 17 ozsundries tomatoes, drained
  • 3 clovesgarlic (or preminced garlic)
  • 1/2 cuphalf and half
  • 1 1/2 cupsmilk
  • 1/2 cupchicken broth
  • 1 1/2 cupsMozzarella cheese
  • 1/2 tspsalt
  • 2 cupsspinach
  • all purpose chicken seasoning or salt and pepper to season

Steps

  1. 1

    Cook pasta according to package instructions, drain and set aside

  2. 2

    Heat butter in a skillet over medium high heat. Add the chicken and season. Saute until chicken is cooked.

  3. 3

    Drain the sundried tomatoes. Add them to the pan along with garlic and saute for a few minutes until fragrant

  4. 4

    Add the half and half, milk, chicken broth, and Mozzarella cheese. Stir until sauce is smooth and cheese is melted. It will start to thicken

  5. 5

    Stir in cooked pasta and spinach. If needed add water, broth or milk to thin. Add more cheese to thicken.
