this recipe is from one of my nutrition classes i think- they're pretty tasty (but def different!)

For the frying oil, any kind of veg oil can be used, NOT solid shortening or lard- safflower, corn, sunflower, peanut, soybean are best for hot temps, over olive and canola.

Ingredients

  • 1 cyellow cornmeal
  • 1 cyellow grits
  • 1/2 cwhite flour
  • 1/2 cwhole wheat flour
  • 2eggs
  • 1 cbuttermilk
  • 3/4 tseasoned salt
  • 1/2 tpepper
  • 1 tbaking powder
  • 2/3 tbaking soda
  • 1/8 coil
  • 1/3 cnuts, finely chopped
  • oil for deep frying (see note in description)
  • 1-1 1/2 cfinely chopped mixed veg (onions are a def, options: bell peppers, eggplant, sweet potatoes, squash, okra, cabbage)

Steps

  1. 1

    Begin heating the oil for deep frying (med-high heat)- about 1 1/2 inch depth.

  2. 2

    Mix all dry ingredients in a bowl

  3. 3

    Mix all wet ingredients in a separate bowl

  4. 4

    Combine wet and dry ingredients

  5. 5

    Add chopped nuts and vegetables

  6. 6

    Add more buttermilk if needed for the consistency of cornbread (very thick pancake batter)

  7. 7

    Drop batter into the heated oil using a small spoon. The oil should bubble vigorously around the dough. Turn the puppies with a slotted spoon to brown them on all sides. It should take only 2-3 min to cook.

  8. 8

    Remove from oil and drain on a paper towel. Enjoy!
