A slightly spicy curry rice is made milder with a cheesy omelet and ketchup.

Dice the carrot and onion into 1/4-inch (5 mm) cubes. Cut the pork into bite-sized pieces. Sauté the chopped vegetables, pork, and corn in a skillet over low heat.

Once the vegetables and pork are cooked through, add the rice. Sprinkle with salt and pepper (about 3 shakes), and stir-fry over medium heat.

When everything is well mixed, add curry powder (sprinkle evenly), Worcestershire sauce (drizzle a circle around the pan), and mirin (about half as much as the sauce). Stir-fry to combine.

Once the seasonings are mixed in, taste and adjust if needed. Divide the rice mixture onto 3 plates.

Heat a small skillet and add oil. When hot, pour in one-third of the beaten eggs (mixed with salt and milk). Gently pull the eggs toward the center with chopsticks.

Add cheese to the center of the eggs.

Fold the edges of the omelet over the cheese to enclose it.

Flip the omelet over onto the rice on each plate. Repeat for the other two plates.

Top with ketchup and serve!
