Baked Coconut Shrimp

Ingredients

  1. 1 LBLarge Shrimp
  2. 1/3 CupCornstarch
  3. 1 tspSalt
  4. 1 tspCayenne Pepper
  5. 2 CupsUnsweetened Shredded Coconut
  6. 3Egg Whites
  7. Baking Sheet with Parchment Paper or Foil
  8. 2Small Mix Bowls
  9. 1Dipping Sauce Bowl
  10. Toothpicks for serving
  11. 1 (1 Gallon)Ziplock Bag
  12. Sauce: 1 Cup Orange Marmalade, 2 TBS Horseradish, 2 TBS Dijon Mustard

    Rinse and Pat dry Shrimp

  4. 4

    In Ziplock bag mix Cornstarch, Salt, and Cayenne.

    Place coconut in one mix bowl and 3 egg whites in the other

  6. 6

    Cover Shrimp in cornstarch mixture, knock off excess

  7. 7

    Dip in Egg Egg Whites, let excess off.

  8. 8

    Roll Shrimp in Coconut, pat well then transfer to baking sheet

  9. 9

    Bake shrimp, 10 min, turn over, then bake 5 min more.

    Dipping Sauce: Mix Marmalade, horseradish, mustard.
