I used to break down all my gluten-free recipes into exactly which flours I use but I haven't for a while now that most gluten-free blends are now able to be subbed almost exactly for wheat flours

Preheat the oven to gas 3 / 160C / 325F and line an 8"× 12" tin
- 2
Mix the dry ingredients together

Add the oil / melted safe fat and juice. Mix to form a slightly crumbly dough

Press half of the mixture into the bottom of the tin. You may need to flour your hands

Spread the jam on top

Gently press the remaining oat mixture on top. This can be a bit tricky! Flour your hands well! It may be easier to use a rolling pin if you want to then lay the top layer over the jam

Bake for 35 - 40 minutes until golden

Let cool in the tin then turn out and cut into slices
