I wanted to eat crispy noodles, but didn’t have any seafood. I also wanted to use up some tofu that was about to expire and some garlic chives from my home garden, so I made mapo tofu as the sauce.
It’s easy, tasty, healthy, and budget-friendly.
I make it often now.

Lightly crush the crispy noodles and spread them on a plate.

Add the mapo tofu sauce mix and sweet bean sauce to a frying pan, then add the ground pork and break it up.

Add chopped garlic chives and roughly chopped bean sprouts, then turn on the heat.

Once the ingredients are cooked through, turn off the heat, thicken the sauce, reheat briefly, and pour over the crispy noodles.
