Boiled rice upto 90℅ (you can use left over rice also). Similarly boiled noodles upto 90℅. Keep aside.

Finally chopped ginger and garlic. Make julians of all veggie. Keep aside

For the rice and noodles

Heat the oil in a wok or kadai till it smokes. Add ginger and garlic, saute on high flame for few seconds.

Add cabbage, spring onion, capsicum and carrots. Saute on high flame for 2-3 minutes. Add schezwan sauce, saute for 1 minute.

Add rice, noodles and salt. Mix well. Cook for 2-3 minutes on medium flame. Keep aside.

For the schezwan gravy

Heat the oil in a wok or kadai till it smokes. Add ginger and garlic, saute on high flame for few seconds.

Add cabbage,and spring onion. Saute on high flame for 2-3 minutes. Add schezwan sauce, tomato ketchup,soya sauce. Mix well saute for 1 minute.

Add cornflour slurry, salt, pepper, sugar. Mix well. Saute on medium flame for 2-3 minutes. While stirring continuously. Keep aside.

For assembling triple schezwan rice

Warm the rice and noodles mixture. In a plate put rice and noodles at the bottom, put generous amount of crispy fried noodles on them. Pour schezwan gravy. Again sprinkle fried noodles. Serve triple schezwan rice immediately garnished with spring onion greens. Enjoy hot in monsoon 😋😋
