Garlic butter egg sandwich

Scrambled eggs are almost every ones favouirte breakfast egg. But have you tried cooking scrambled eggs in white sauce or béchamel sauce? I bet you have not! I have also not tried this till today. I was a bit skeptical.
One bite and I was amazed at the texture of the eggs in the sauce. The white sauce keeps the eggs creamy and moist. It's a tasty twist on a morning mainstay.
You can serve these eggs any way you like: Wrap em’ up in a burrito or breakfast taco. Pile them high on sourdough toast. Make a breakfast sandwich with bagels or a croissant or top them on a biscuit or English muffin with avocado. Endless options to try.
I however, served them as dainty heart shaped sandwiches. I cut out hearts from the slices of bread (2 hearts from 1 slice). Secured the sandwich with a skewered pimento olive, for appeal. You can use roma or cherry tomato also.

In a bowl add the eggs, salt and chilli powder. Beat well.

Heat 2 tablespoon butter in a skillet and add the eggs and scramble. Remove and set aside.

In same skillet, melt remaining butter and sauté the garlic till fragrant.

Add the flour and cook for 1 minute.

Add the milk and chilli flakes cook sauce to desired consistency.

Add back the scrambled eggs and mix to coat with sauce.

Add pepper powder and parsley. Mix well.

Cut heart shapes or any shape from the slices.

Spread the egg mixture on one half and close secure with a pick or skewered olive.

Serve.
