Dry roast jeera & fenugreek seeds

Grind into fine powder & keep aside

Heat an oil in a Kadai, add fenugreek seeds, garlic cloves...
Add Sliced Brinjal
Sauté for some minutes

Add turmeric powder red chilli powder

Finally add water to your required consistency & close the lid...
let it simmer for some minutes until brinjal is well cooked....

Open the lid & add tamarind water

Add jeera & fenugreek powder, pinch of salt & close the lid leave it for some minutes

Open the lid, now oil begin to separate from gravy..
Finally add sugar (to enhance its flavor)
