BBQ Fried Rice

Ingredients

  1. 1 cupbasmati or jasmine rice
  2. 1/4 Cupshredded coconut
  3. 1/2 tspAllspice
  4. 1.5-2 lbsbrisket or other smoked meat
  5. 1onion, finely diced
  6. 1jalapeño, finely diced
  7. 1bell pepper, finely diced
  8. 4eggs, scrambled
  9. 4 tbspoyster sauce
  10. 4 tbspWorcestershire sauce
  11. 1 tbspfish sauce
  12. 4 tsprice vinegar
  13. 2 tbsporange juice concentrate
  14. 2 tspBBQ sauce of choice (I like sweet baby rays)
  15. 1 tspginger paste or 1.5 tsp ground ginger

Cooking Instructions

    Cover rice in enough water to cook. Add in coconut, allspice and a dash of salt. Bring to a boil, cover and let simmer for 8 minutes, stirring occasionally. After 8 minutes is up, keep stirring rice in 1 minute increments until rice sticks to the bottom of the pot. Remove from heat and set aside

    While rice cooks, finely dice your onion and peppers

    Crack eggs and beat in a bowl. Take oysters sauce, worcestershire sauce, fish sauce, rice vinegar, orange juice concentrate, ginger and BBQ sauce and mix in separate bowl.

    Take your BBQ meat and chop in to cubes. I used brisket, but most meats should work alright

    Get everything lined up and ready to rock and roll. Put wok on high heat and add a little olive oil

  6. 6

    Once oil is hot, add in peppers and onion, sprinkle lightly with some salt. Cook until onion is translucent

  7. 7

    Move veggies to the side of your wok and add eggs. Stir egg as it cooks so it scrambles good. Once egg isn't 'wet' looking, stir veggies all back in

    Add in your diced meat and heat through

    Once meat is heated through, make a well in the middle and add rice. Mix thoroughly and constantly until rice begins to pop and stick to bottom. It will not take long. Then add your sauce, and continue to stir rice until most liquid is cooked out. Cook your rice to however "fried" you like your fried rice

    You can garnish with green onion if you want. Add on some BBQ sauce or Yumyum sauce for extra oomph. Enjoy!
