Wash and cook quinoa in sufficient water for 8-10 minutes or until cooked. Drain excess water. Chop and wash green amaranth leaves.

Heat oil in a pan and stir-fry the chopped amaranth leaves for 2-3 minutes.

Add chopped green garlic and salt. Mix well and continue stir-frying for another 2-3 minutes. Finally add cooked quinoa, mix and cook for 2-3 minutes.

Serve this healthy and wholesome Stir-fried Amaranth Quinoa bowl with curd.
Note:
1.You can add green chilies along with green garlic for extra flavor.
