The most difficult and scary thing for frying gyoza is they stick on the bottom 😨 And the most crucial way to avoid that is you patience!!!!! After adding water and covering with lid, don't stand in front of the stove, wait, and keep opening and checking, the dumplings skins will be broken 😭(I had so much bad experience for that) Do other things first, turn back, open the lid, and the water all gone. Now you can turn off the fire, use spatula to take gently, and enjoy the delicious dumplings.😋
煎餃子最怕的就是底部黏鍋,其實最需要的就是耐心!!加水蓋鍋蓋後,別站在爐子前面乾等,一直開鍋蓋檢查,最後餃子皮破掉😭(過來人心裡話)。先去做其他事情,回來後開鍋蓋,水也燒乾了,關火、鏟子輕刮、輕鬆起鍋、享用、真好吃😋

Add 2 spoons of oil in the pan, heat the oil, and put raw dumplings in the pan. (下約2匙油,熱油後放入生餃子)

Add water until 1/4~1/3 high of the dumplings. (加水至餃子的1/4~1/3高)

Use a lid to cover the pan, turn to low fire, and wait until the water is all gone and it starts to become dry in the pan. It takes 8~10 mins.(蓋上鍋蓋,轉小火燜燒,直到鍋中的水燒乾,大約等待8~10分鐘)

Open the lid, and you'll see the bottom of the dumplings is brown and a little bit dark, and that means the dumplings are done, and it's time to turn off fire immediately. Use a spatula to take dumplings gently on a plate and enjoy the dumplings 🤤 (開鍋蓋,餃子的底部已經呈現金黃焦脆,這時後馬上把火關掉,不然餃子會燒焦。用鍋鏟輕輕把煎餃一個個呈盤,就可以享用煎餃啦🤤)

I highly recommend this dumpling sauce recipe: a small spoon of sugar, 1/2 small spoon of white vinegar, 2 spoons of soy sauce, a little bit sesame oil, and blend the ingredients evenly. (推薦大家可以嘗試這個沾醬:1小匙糖、半匙白醋、2匙醬油、些許麻油,攪拌均勻)
